Cook noodles according to box. Slice or dice vegies, then steam in a steamer or microwave to soften. Preheat oven to 375°. Grease casserole dish with cooking spray. Place a layer of sauce on bottom of dish, followed by a layer of noodles. Next, spread a layer of vegetables. Sprinkle with spices, then sauce, then Mozzarella. Repeat layering of noodles, vegies, sauce and cheese until used up. Top layers should be noodles, sauce and mixture of Cheddar, Mozzarella and spices. Bake approximately 35 minutes or until cheese is fully melted.
