Prepare pastry by mixing flour and salt; cut shortening into flour until size of small peas. Sprinkle 1 tablespoon water and toss with fork and push aside until all dough is mixed. Roll to 1/8-inch thick and cut into 6-inch circles. Place 2 tablespoons apples (cooked about 45 minutes to an hour in 3 cups water; 1/2 cup sugar added after cooking). Fry in heavy skillet in shortening at 375° about 1/8 to 1/4-inch deep. Fry 3 to 4 minutes on each side. Drain on paper towel. Sprinkle with powdered sugar, if desired. Makes 12.
