Preheat oven to 400°F. Grease a round pie dish and lay 1 sheet pastry in it. Trim to fit, line base with parchment paper and fill with dry beans. Bake 10 mins. Remove paper and beans and set aside. For the filling, pour 1/2 cup water into a saucepan and add apple chunks, 1 tbsp sugar, vanilla and cinnamon or nutmeg. Cook over medium heat 10 mins. Drain excess liquid. To assemble, spread filling evenly on pie base. Sprinkle with remaining sugar. Lay remaining pastry sheet on a lightly floured work surface and cut out a circle to fit top of pie. Lay over filling and press edges together to seal. In bowl, whisk egg and milk together with a fork. Brush on pie top. Bake 20-30 mins, until top is golden. Dust with powdered sugar and serve warm with cream.
