Rinse beans and set out the night before. Place beans in stew pot. Wash potato and put in stew pot (whole with peel). Slice onion; add stew meat or lamb shank. Add tomato sauce and enough water to fill pan 1/2 full. Salt to taste. Slow cook for 2 to 3 hours. Remove any bones. Peel potato. Drain broth. Mash all together. Serve with chips or bread.
