Boil chicken in large pot; may add bouillon cubes if you like. Melt butter or margarine and slowly saute mushrooms and onions until onions are transparent. Add to boiling chicken. Slice potatoes (about 1 1/2-inch slices). Add to chicken pot. Slice carrots (1 to 1 1/2-inch slices). Add to chicken pot. Add 2 cups of white wine to chicken pot. Salt and pepper to taste. Cover pot and turn heat on low. Cook for 1 hour or until chicken is done and vegetables are tender. A complete meal can be served, as a soup in bowls or on plates with individual pieces of chicken and vegetables with broth spooned over the top. Truly delightful chicken.
