Grease and flour a 12-cup Bundt pan. Preheat oven to 375. Peel, core and cut apples into small pieces. Mix apples with sugar & cinnamon. Add allspice and/or nutmeg if using, as well as raisins & nuts. Whisk eggs, oil, sugar, orange juice, orange rind, & vanilla. In a separate bowl, mix flour, baking powder, & salt. Stir in liquid batter. Drain apples of any cinnamony juice that has accumulated. Pour 1/3 batter into pan, then 1/2 apples, another 1/3 batter, the remaining apples, and finish with the remaining batter. Bake for 1.5 hours or until toothpick comes out clean.
