Cook or steam cauliflower and cut up in small florets. In pie dish, spread oil or spray and lay slices of cheese on the dish so it covers the bottom as a pie crust. Put cooked, drained cauliflower in dish. Add the butter, salt and pepper. Put second package of cheese on top, covering like a crust. Sprinkle bread crumbs on top. Place in 400° oven for 20 minutes (until cheese begins to brown). Take from oven and let stand for 5 minutes. You can use a small head of cauliflower and 1 pkg. of cheese. Split the cheese for two layers and use 1/4 cup of breadcrumbs.
