Salt and pepper brisket. Brown fat side of brisket in a large frying pan. Put brisket in roasting pan, brown side up. Brown onion in frying pan. Place on top of brisket. Place carrots and celery around brisket; add 1 cup of water. Cover and cook 3 hours at 350°. When done, remove from pan. Stir in cornstarch and water to make gravy.
