Preheat oven to 350°F. Line an 8x4 inch loaf pan with parchment paper. In a large bowl, combine rice, vegetables, 3 oz cheese, salsa, spring onions and eggs. Season. Press 1/2 into prepared pan and sprinkle with remaining cheese. Top with ham and pepper strips, pressing down firmly. Top with remaining rice mixture and sprinkle with reserved cheese. Bake for 20-25 mins, until firm to touch and golden brown. Let stand for 10 mins. Slice and serve with mixed salad greens.
