preheat oven to 350 degrees f. line a broiler pan with aluminum foil and position the broiler rack on top of the pan. lightly coat the rack with vegetable oil. combine brown sugar and cayenne in a shallow dish, stirring to mix well. press one side of each slice of bacon firmly into the spiced sugar to coat well. arrange the slices of bacon on top of the broiler rack in a single layer, sugared-side up. sprinkle any remaining sugar on top of the bacon slices evenly. bake until the bacon is crisp and sugar is bubbly, at least 25 minutes (maybe closer to 30 minutes; a convection oven makes it go faster but watch closely). make sure it is really crispy! transfer to paper towels to drain briefly (too long and the bacon sticks to the paper). place on a plate or serving dish to cool (can be made several hours ahead). serve warm or at room temperature. awesome with a brunch or as hors doeuvres. or just make some in the afternoon and eat the whole pound by yourself.
