lightly roast the cashew nuts. even when you are using roasted-type cashew nuts, lightly roast them with a pan. it will bring out a nice fragrance. add the dry ingredients into a bowl, and mix well with a whisk. if you are worried about the little lumps, please sift them. add the soy milk and vegetable oil to the bowl, and mix well. add brandy for flavour if you like. pour the batter into your desired cake pan. top with nuts and banana slices. bake in the oven for about 30 minutes at 180c and done. it's delicious served either warm or cool. if it's not sweet enough, you can serve it with soy milk whipped cream.
