put the water and sugar in a microwave-safe french press or liquid measuring cup. heat it in the microwave until boiling. this will take several minutes; start with 3 minutes and heat further from there. remove the cup from the microwave. stir the water to ensure the sugar has dissolved, then stir in the thai iced tea mix and let it sit for 10 minutes to steep. 2. plunge down the strainer if using a french press, or strain the solids out of the tea by using a fine mesh strainer, cheesecloth or coffee filter. 3. chill in the refrigerator for 1 hour or until cold. 4. to serve, place a half cup of ice into 8 separate glasses. pour 8 ounces (1 cup) of tea into each glass over the ice. top each glass with a splash of half-and-half. drink immediately.
