Different versions of ceviche are part of the culinary cultures of various Latin American countries along the Pacific Ocean where each iteration is considered native, including Chile, Colombia, Costa Rica, Ecuador, El Salvador, Guatemala, Honduras, Mexico, Puerto Rico, Nicaragua, Panama, and Peru.
