The Maillard reaction at 250 °C generates melanoidins that give carne asada its caramelized crust and smoky aroma, while starch gelatinization at 200 °C produces crisp corn tortillas. Fermentation at 20–22 °C produces lactic acid, lowering pH to 4.0–4.5 and preserving cabbage for salsa, whereas pickling in 5 % acetic acid at 4 °C preserves onions and imparts acidity. Pressure‑cooking at 121 °C raises the boiling point, accelerating starch gelatinization and yielding tender beans with retained nutrients.
