The low thermal conductivity of the leaves (~0.4 W m⁻¹ K⁻¹) slows heat transfer, allowing uniform cooking and preventing surface drying. Phenolic compounds from the leaves (tannins, flavonoids) are released into the masa, contributing antioxidant activity and a mild bitterness that balances the savory filling.
