The resulting proteolysis and subsequent acidification by lactic acid bacteria lower the pH to 4.5–5.0, creating a stable, low‑pH, high‑salt environment that suppresses spoilage organisms and concentrates umami flavor. Volatile sulfur compounds and furanol derivatives contribute to the characteristic fishy aroma.
