What You Need to Know
During 48–72 h of fermentation at 20–25 °C, lactic acid bacteria metabolize leaf sugars to lactic acid, lowering the pH to 3.5–4.0 and inhibiting spoilage organisms. Acetic acid may be added to accelerate acidification, and volatile compounds such as 2‑ethyl‑1‑hexanol and hexanoic acid develop, contributing to the characteristic flavor.
