What You Need to Know
The process relies on osmotic pressure from 10–15 % salt to suppress spoilage microbes, lactic acid fermentation that lowers pH to 3.5–4.5, and the conversion of sinigrin in mustard seeds to allyl isothiocyanate by myrosinase during frying at ~180 °C. A thin oil layer (~0.5 cm) then acts as a physical barrier to oxygen and moisture, further extending shelf life.
