What You Need to Know
Verjuice’s low acidity (pH 3.5–4.0) allows it to act as a mild vinegar substitute; heating to 60 °C concentrates flavor while preserving acidity, and a 3–4 % solution lowers pH to ~3.5 to inhibit spoilage bacteria. Rose petal jam relies on 2–4 % natural pectin; when combined with 50 % sugar and 0.5 % citric acid, heating to 100 °C for 10–15 min triggers gelation, whereas insufficient pectin or inadequate heating yields a runny product, and temperatures above 110 °C degrade aromatic volatiles.
