What You Need to Know
During fermentation, lactic acid bacteria lower the dough pH to ~4.5, strengthening the gluten network and imparting a subtle sour flavor. Baking at 200–220 °C triggers Maillard reactions between reducing sugars and amino acids, producing melanoidins that brown the crust, while the crumb reaches ~95 °C to gelatinize starches and set the structure.
