What You Need to Know
Roasting at 120–150°C for 5–10 minutes triggers Maillard reactions between amino acids and reducing sugars, producing melanoidins that give the spice its brown color and complex flavor. The heat also volatilizes aromatic terpenes and capsinoids, while partial oxidation of phenolics reduces capsaicin content by ~30%. Excessive heat (>170°C) causes caramelization of sugars and formation of pyrazines, leading to scorched bitterness.
