What You Need to Know
During fermentation, bacteria such as Lactobacillus, Acetobacter, and Propionibacterium metabolize carbohydrates via glycolysis and subsequent pathways, producing lactic acid, acetic acid, propionic acid, CO₂, and ethanol.
