Controlled legume fermentation (30–35 °C, 12–24 h) induces endogenous proteases, hydrolyzing storage proteins and reducing phytic acid, thereby increasing amino‑acid absorption. Excessive heating (>150 °C) degrades volatile aromatics and can generate acrylamide, while ghee above 190 °C undergoes lipid peroxidation, forming aldehydic toxins and diminishing conjugated linoleic acid antioxidant activity.
