Masa mixed with water is heated to 70–80 °C, causing corn starch granules to gelatinize and release amylose and amylopectin, forming a viscous matrix. Simultaneous protein denaturation creates a network that stabilizes the viscosity, while added sugars and spices dissolve without crystallizing. Precise temperature and timing (15–20 min simmer) prevent gritty texture or curdling.
