Technical Description

Plant oils (e.g., canola, coconut) are enzymatically interesterified at 40–60°C with 0.1–0.5% w/w enzyme load (e.g., Lipozyme TL IM). Reaction occurs in continuous stirred-tank reactors (CSTRs) with 30–90 min residence time to achieve >70%
